Citrus Buttercream – Light, Fluffy Buttercream!

Here is a light and fluffy buttercream that I feature in my Hazelnut Torte recipe!

If you are looking for a good alternative to the rich chocolate frosting or my decadent salted caramel buttercream, try this recipe out for citrus buttercream.

Whipping this buttercream for a few minutes longer creates a light texture and a smooth frosting. This recipe is great for spring time.

Try putting it on almond cupcakes or on some fresh sugar cookies. It is a crowd favorite every time I make this citrus buttercream. I especially like the fact that it is a good way to use up those oranges sitting on your counter.

Citrus Buttercream
Light and fluffy citrus buttercream.

For Citrus Buttercream:

Butter, softened-  1 lbs. (454 g.)

Confectioners’ Sugar-  1 lbs. 5 oz. (595 g.)

Oranges, juiced and zested-   2

Vanilla Extract-  1 1/2 Tbsp. (22 mL.)

1. Soften the butter in the microwave for 45 seconds. Add to your mixer and blend with whip attachment until light and smooth.

2. Add in the sugar and mix by hand with a spatula until slightly mixed. This is to avoid the dreaded puff of powdered sugar all over your kitchen. Blend with the whip attachment on medium for 2 minutes.

3. Add the juice and zest from your two oranges and the vanilla extract. Mix the buttercream until light and fluffy for around 6 minutes on high. Let it sit at room temperature if you’re using it that day or cover and refrigerate. The day you’re using it, put it back on your mixer and blend until light and fluffy again.

This is also a great recipe to use for cake balls or white cake. Don’t know what cake balls are? They are just old cake scraps mixed with frosting and formed into a ball. I like to coat them with chocolate or a dollop of more buttercream and stick a toothpick in them for dessert appetizers.
